Practical Strategies for Healthy, Happy Meals
Packing a school lunch can feel like a daily puzzle—balancing nutrition, taste, time, and budget, all while keeping your child excited to eat what you’ve prepared. If you’ve ever found yourself staring at an empty lunchbox wondering what to pack, you’re not alone!
Join this dynamic virtual class to gain the tools, recipes, and inspiration you need to make lunch prep easier, healthier, and more enjoyable. We’ll start with a brief, evidence-based overview of nutrition principles for growing children, along with practical solutions for common challenges such as picky eating, dietary restrictions, busy mornings, and the tug-of-war between convenience and quality. Then, we will guide you through a live cooking demonstration featuring three plant-forward, lunchbox-ready recipes: deli-style tofu slices, edamame-artichoke spread, and no-bake protein balls.
You’ll also explore creative ideas for batch prepping, repurposing leftovers, and making smart choices when selecting pre-packaged items. The session includes time for Q&A, plus a take-home handout with planning guidance, sample lunchbox templates, and additional recipe inspiration—so you can send your child off each day with meals that nourish both body and spirit.
This class will not be recorded. Attendance requirement for incentive points – at least 80% of the live session.

Instructor: Reshma Shah, MD, MPH, is a board-certified pediatric physician and author of the award-winning book, Nourish: The Definitive Plant-Based Nutrition Guide for Families. She was formerly an affiliate clinical instructor at Stanford University School of Medicine and currently serves as the co-director of the Learning Center at Plant-Based Juniors.
