Healthy Kitchen, Cooking Together


Beans are a nearly perfect food. They are known to be beneficial sources of plant-based proteins, fiber, low glycemic carbohydrate, and a plethora of vitamins, minerals, and antioxidants. It’s no wonder people who regularly eat beans have less risk of developing heart disease, diabetes, gut-associated diseases, and certain cancers.  Beans also happen to be an environment-friendly, inexpensive, and convenient option to work into your weekly meals. 

Join us for the next Healthy Kitchen virtual cooking class to learn more about the bean and gain hands-on experience using this superfood ingredient in less obvious ways. By the end of the class, you will have dinner ready plus additional ingredients already prepped for a second bean item later in the week. No matter if you are cooking for one or cooking for a family, the menu can be adjusted to meet your personal needs.

The recipe, including ingredients and equipment needed, will be sent out at least one week before the class so you’ll have time to shop for ingredients in advance. This class is offered on two dates during the summer quarter: July 16 and August 6. The recipe will be the same for both classes.

Instructor: Rosalyne Tu, MS, RDN, has been working as a dietitian since 2003 and has been teaching the Healthy Kitchen series of classes at Stanford since 2011. She is currently a nutrition coach and instructor for BeWell’s Healthy Living program and manager of the BeWell Wellness Profile.
